Spirulina Pancakes!

Who wouldn’t want algae for breakfast?? We call our tasty green pancakes “Christmas tree pancakes,” “spring flowers pancakes, “ or sometimes the toddler calls them the “green monster!” Either way, they are a great way to turn a pancake into a superfood.

Also, it's blue-green which is oh so much fun!

Nerd out time:

Spirulina is high in protein, comparable to eggs! It contains B1, B2, B3, beta-carotene, magnesium and iron. Spirulina is anti-inflammatory, antioxidant, improves allergies, treats anemia, has brain protection, provides pain relief, and has anticancer properties. Spirulina is great postpartum to restore energy and iron levels, especially if anemia is of concern. It is also great for lactating women because it is a galactagogue!

Sesame seeds are one of the most powerful seeds to protect and promote milk supply. They increase milk production due to their calcium content, healthy fats, protein, fiber, and estrogen-like properties. I like to include sesame seeds to increase children’s intake of calcium as well, especially if your family is following a dairy free diet. Sesame seeds actually contain calcium, magnesium, and zinc, all nutrients that support healthy bones.

Recipe:

2 ripe bananas

3 cups of sprouted gluten-free oatmeal

4 dates, pits removed

2.5 cups plant based milk

1 TBSP spirulina

1 TBSP sprouted sesame seeds

1 tsp cinnamon

Date syrup or elderberry syrup for topping :)

Blend all ingredients in a high powered blender or food processor until well mixed. Pour batter onto heated griddle and heat each side for about 3 minutes until pancakes are browned. Serve with date, maple, or elderberry syrup. Yum!
