Chickpea cookie dough balls

Garbanzo beans or chickpeas are important to include in your diet. They are lactogenic, meaning they increase milk supply for lactating women and help to protect that supply. (Chickpeas are a cousin to fenugreek which is more commonly known for its lactogenic effects. )

Chickpeas are also important for littles because they are high in fiber, with most of the fiber being the insoluble type which means it stays undigested all the way through the colon! This is important because some children do struggle with infrequent bowel movements and maintaining a healthy body means one to three bowel movements daily. :)

OK nerd out time….

Chickpeas have profound benefits on blood sugar control, only 1 serving per day for one week improves blood sugar control, which is important for everyone, especially those with gestational diabetics or diabetes mellitus.

Okay, so besides fiber, what else is in these creamy little bites?

Molybdenum, folate, cooper, phosphorus, protein, iron and zinc. Molybdenum is a mineral that supports antioxidants, removes toxins and supports metabolism of fats and carbohydrates.

Recipe below does contain sugar free chocolate chips, omit at your own risk. :)

Recipe

2 cans chickpeas (Make sure can has BPA-free liner)

1/8 tsp sea salt

1/8 baking soda

2 tsp vanilla

1/3 cup almond butter

1 cup pitted dates- soaked overnight

2 tbsp tiger nut flour

1/3 cup sugar free chocolate chips

Preheat oven to 350 degrees. Toss everything (except chocolate chips) into the food processor or high powered blender. Once everything is mixed, add chocolate chips and make dough into little balls on nonstick oven pan. Cook in oven for about 15 minutes, balls will be doughy. Place balls in fridge for two hours to slightly harden. (but they will still have the consistency of dough!)
