Banana Spinach Muffins

Okay, I know what you are thinking, these muffins are all over the internet! Blender muffins, baby led weaning muffins, etc. I promise, these are different! These muffins highlight spinach, yes, spinach for toddlers. These muffins are also grain-free, dairy-free, gluten-free, vegan and have no refined sugars and no added fat!

Nerd time…

Lets highlight spinach! Spinach is high in vitamin K, which promotes strong bones, wound healing, and regulates normal blood clotting. Vitamin K also helps to regulate absorption of vitamin D and calcium!

Spinach is also high in vitamin A. Vitamin A is known for eye health, helps to treat acne, supports skin and bone health, and is important for the immune system.

Manganese is a trace mineral that has anti-inflammatory properties in the body and promotes bone health.

Folate is a B vitamin that is a building block for making white and red blood cells. It is critical for energy and times of rapid grow- think kids, teenagers and pregnancy!

Of course, spinach is mostly known for it’s iron content. Iron is an essential building block of hemoglobin, which carries oxygen throughout the body. Iron is also important for immune system function, and it promotes energy, focus, sleep and supports healthy gut bacteria. It basically supports everything :-)

Spinach gets is dark green color from chlorophyll, which promotes oxygen, healing, detoxing and has anti-inflammatory and anticancer properties.

OK! So these banana spinach muffins are perfect for the active and growing child or teenager in your life!

Recipe:

2 bananas

1 apple

1/2 pound fresh spinach

2 chia eggs

2 tsp vanilla

1 tbsp molasses

2 cups tiger nut flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tea sea salt



Preheat oven to 350, combine wet ingredients in the blender or food processor. Combine dry ingredients in a smaller bowl. Slowly mix dry ingredients into wet ingredients until both are combined.

Put into coconut oil greased muffin tin, bake for 16 minutes, enjoy once cooled!
