These breakfast sausages are sweet, filling and oh so delicious! I wanted something for those rushed mornings that would be high in protein, fiber and healthy fats. What I got though was a really versatile anytime bite full of superfoods for supermoms! The toddler and preschooler were instantly impressed and I knew I had a winner. So here it is, breakfast sausage patties made from lentils, flaxseed, sprouted oats, and hemp hearts. It doesn’t get more nutrient dense than that!

Here is my warning though, they are INCREDIBLY lactogenic. Watch out lactation cookies, here come the breakfast patties! The ingredients are nutrient dense and promote lactation. Lentils, flaxseed, oats, hemp hearts, dates and cinnamon are ALL top lactogenic foods and when combined are quite the power house! So there is your warning!

Nerd out time…

Hemp hearts are a commonly overlooked superfood. They contain essential fatty acids (omega 3 and omega 6), are high in protein, fiber, antioxidants, vitamin E, selenium, potassium, magnesium, calcium, iron, and zinc… basically a multivitamin!!

Hemp seeds remind me of the quote, “let food be thy medicine.” This is because hemp hearts promote heart health, skin health, balanced hormones, promote healthy moods, healthy digestion, healthy weight, help to maintain healthy blood sugar levels, and of course replenish mom during pregnancy and breastfeeding. Recipe:

6 dates soaked overnight in 3 cups of filtered water

1 cup sprouted lentils

1/2 cup flaxseed ground

1/2 cup hemp hearts

1 cup sprouted gluten-free oats

1 TBSP date syrup

1/2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

First soak the dates in 3 cups of water overnight to create some sweetened water.

Preheat oven to 350. Pour just the sweetened water (set dates aside) into a pan with the sprouted lentils, and simmer for about 30 minutes until they are tender. Once the lentils are tender and falling apart, add the dates and mash into the lentils. Next add the flaxseed, hemp hearts, oats, date syrup, cinnamon, nutmeg and salt and mix all ingredients well. Next form the mixture into patties and place onto a greased cookie pan. Once patties are all formed, bake at 350 for about 18- 20 minutes, flipping halfway through. Let cool and enjoy!
