“Krunchy” Granola

This granola is incredibly lactogenic- it’s truly a granola for the girls! But also for you mama! It is also nutrient dense and contains healthy fats, antioxidants, lactogenic oats, seeds, and yummy chickpea water.

Nerd out time….

Not only are oats high in fiber, antioxidants, magnesium, iron, zinc, but they also promote healthy digestion, blood sugar levels and promote healthy cholesterol levels. Oats also contain tryptophan which is an amino acids that gets converted to serotonin! Serotonin is the hormone responsible for mood, well-being, sleep, and digestion.

I also included seeds in this recipe because they are nutrient dense power houses! Sesame seeds are also full of antioxidants, they reduce inflammation, promote digestion and support healthy hair, skin, nails and bones! Sesame seeds are also high in calcium and iron and lysine. Lysine has antiviral protection, it increases mineral absorption, supports mood, and promotes skin health and wound healing. And of course it is lactogenic! :)

Recipe:

4 cups sprouted gluten-free oats

1.5 cups raw mixed nuts (soaked in water overnight)

1 cup seeds: sesame, pumpkin and flax

1 cup mixed dried fruits: goji berries, figs, dates, golden berries, raisins

1 cup aquafaba (the water from a can of chickpeas)

1/2 cup coconut flakes

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp vanilla extract

Preheat oven to 350.

Whisk aquafaba for 10 minutes until it’s light and fluffy. Drain off water from raw nuts and add nuts, seeds and aquafaba into a food processor or blender to slightly chop and mix ingredients. Then add remainder of ingredients (oats, flakes, fruits, and spices) into a bowl and mix with blended ingredients.

Spread onto a greased baking sheet and cook for 10 minutes, shake pan about half way through.
