Zucchini Pizza

The first time I made these my husband asked me “where the pizza was?”

I guess everyone has their own definition of pizza, maybe my definition is a stretch…

Here it is though, sauce made from fresh tomatoes and beets! Fresh crumbled vegan cheese, vegan pepperoni or the real deal all on a little “crust” of sliced zucchini. Yum!

Nerd out time…

So Zucchini is prized for being nutrient dense, it contains vitamin A, C, fiber, folate, potassium, and B vitamins.

Zucchini helps to promote healthy digestion, reduces inflammation and free radicals, promotes heart health and regulates blood sugars. It also helps to protect your eyes from that nasty blue light from screens! It also promotes energy, and can improve cognition. My brain feels great just thinking about it!

Recipe:

1 medium size zucchini

1/2 cup pizza sauce (I buy homemade from the co-op)

1 small beet

2 cups vegan mozzarella cheese

Toppings! Basil, olives, oregano, pineapple, vegan sausage or bacon!


Preheat oven to 450, slice zucchini about 1/4 inch thick and place on foil-lined baking sheet. Bake zucchini for 10 mins. Then remove zucchini from oven and flip. Top zucchini with sauce, vegan cheese and toppings and bake for an additional 10 minutes, make sure zucchini is tender, enjoy!

Pizza sauce:

2.5 cups of fresh tomatoes

1 small beet

1/4 cup onions

Handful of fresh basil

3-4 garlic cloves

1 tsp salt

Put all ingredients into blender until well blended, then simmer on stovetop until sauce becomes thick, about 30 minutes.
